Does anyone know where I can find information about orchestras performing movie soundtracks, like The Pirates of the Caribbean

It should usually say within the albums linear notes; I believe that PotC was performed by the Hollywood Studio Symphony and various sythesizers.

Dan usually has some info on his site that you might find convienent - www.soundtrack.net .

Actually, what I meant to ask was does anyone know where you can find information about orchestras performing soundtracks live, as in you can buy a ticket and go see an orchestra perform the Pirates of the Caribbean Soundtrack live.

There's no one-stop for such info, but if you visit http://www.tnv.net and request a list of orchestras that have rented scores through their service, this may get you somewhere.
