my favorite action music is definitely the Battle of Hoth. a full 15 minuts of rock 'em sock 'em action. Williams got the most out of the orchestra that day: great orchestrations, complex rhythms, and extremely difficult parts all combines for a great piece of extended film music (there aren't too many 15 minute cues are there?).
those little trumpet fanfares when Luke is attached to the AT-AT aren't easy to play!

Raisuli Attacks from The Wind and the Lion. That's battle/action music, isn't it. I haven't seen the film.

Any and all battle music from The Blue Max. What a wonderful, dauntingly complex passacaglia that is (apparently)!

There are many, and "Battle of Hoth" of course ranks highly among them, but one of the best hasn't been mentioned so far: "Helm's Deep" and "The Dawn Battle: Theoden's Victory" from Rosenman's Lord of the Rings score. Okay, that's two tracks, but one battle.NP: Preparing an audio CD of some MIDI files a friend of mine composed.

What, no war movie music. A good bit of
film making with music can be seen in a scene
from "In Love and War". Robert Wagner is about to go down a hill for help and gets out of his fox hole and the music starts as
he loads up for the run. An upbeat cue starts
with snare drums with music as he starts down
the hill. This runaway scene is scored low
key but with increased music awareness as
the run continues and enemies are
met, good stuff.
By the way, the astroid chase in SW2 is my
favorite action cue.
