my favorite action music is definitely the Battle of Hoth. a full 15 minuts of rock 'em sock 'em action. Williams got the most out of the orchestra that day: great orchestrations, complex rhythms, and extremely difficult parts all combines for a great piece of extended film music (there aren't too many 15 minute cues are there?).
those little trumpet fanfares when Luke is attached to the AT-AT aren't easy to play!

Raisuli Attacks from The Wind and the Lion. That's battle/action music, isn't it. I haven't seen the film.

Any and all battle music from The Blue Max. What a wonderful, dauntingly complex passacaglia that is (apparently)!

There are many, and "Battle of Hoth" of course ranks highly among them, but one of the best hasn't been mentioned so far: "Helm's Deep" and "The Dawn Battle: Theoden's Victory" from Rosenman's Lord of the Rings score. Okay, that's two tracks, but one battle.

    You can add:

    13th Warrior battles
Sleepy Hollow (Chase and Final Battle)
    Willow
    The Alamo
    Die Hard Trilogy
Lethal Weapon is pretty good ("Armor Piercing Bullets" from 3)
    Aliens
    Superman
    TND motorcycle chase

and so on and so on.

In no particular order, and with admission that I probably left out some great stuff:

Pretty much any action cue in any STAR WARS score (especially the asteroid chase from EMPIRE), including McNeely's SOTE.

"The Tree of Death" & "The Windmill" from SLEEPY HOLLOW.

"Into the Book" from ALICE IN WONDERLAND (Hartley's version).

    anything from WARRIORS OF VIRTUE

    anything/everything from CUTTHROAT ISLAND

    "Klendathu Drop" from STARSHIP TROOPERS

all the battle cues in FIRST KNIGHT

"T-Rex Rescue & Finale" from JURASSIC PARK

"Sharptooth & the Earthquake" from THE LAND BEFORE TIME

"The Hunt" & "Visitor in San Diego" from THE LOST WORLD

"The Walls are Whispering" from MERLIN

"Escape to the Clouds" from MYSTERIOUS ISLAND

    "Abomination" from THE RESURRECTED

"The Hunt" from PLANET OF THE APES

"Battle at the Pyramid" from STARGATE

"The Fire Dragon" from THE 13TH WARRIOR

"Raisuli Attacks" from THE WIND AND THE LION (yes, it's battle/action music Kris... GO WATCH THE MOVIE NOW, it's a classic!)

    "The Phantom" from THE PHANTOM

    "Hijacking" from AIRE FORCE ONE

and any action cue from WATERWORLD

    For me, it would be:

    Action music:
    1. Rocket Away (The Rock) 11 mins of adrenaline pumping music.
    2. Tracks 2 & 3 from TWINE (Best chase music)
    3. Caviar Factory (TWINE)
    4. Zoom A & B (Mission: Impossible)
    5. Rubbing is Racing (or whatever you call it) Days of Thunder
    6. Furniture (Face/Off)

    Battle Music:
Most of the stuff I wanted to name were already mentioned by you guys.

What, no war movie music. A good bit of
film making with music can be seen in a scene
from "In Love and War". Robert Wagner is about to go down a hill for help and gets out of his fox hole and the music starts as
he loads up for the run. An upbeat cue starts
with snare drums with music as he starts down
the hill. This runaway scene is scored low
key but with increased music awareness as
the run continues and enemies are
    met, good stuff.
By the way, the astroid chase in SW2 is my
    favorite action cue.
